{Yum} Peach Cobbler Popsicles

How do you get a Kleenex to dance? Put a little boogie in it!
Why was the broom late for work? He overslept!
What did the Burgers name their daughter? Patty!

There is something so quintessentially Summer about the cheesy jokes on popsicle sticks. And goodness knows we go through a lot of them around here! Especially when the kids are swimming...I like to think I'm keeping them hydrated with a steady flow of the frozen juice sticks.

A few weeks ago, with a kitchen full of fresh fruit, we decided to have a Popsicle Challenge. Each of us set out to create the yummiest (or strangest, in some cases!) popsicle, using any combination of ingredients we could imagine. We had so much fun sampling each other's creations, but this peach cobbler was definitely a favorite! And bonus points because it's easy and healthy! Ish.

{What You Need}

2 large Peaches, peeled & chopped
1 cup Vanilla Yogurt
Dash of Cinnamon
Biscoff Cookies (or shortbread), coarsely chopped
Popsicle Molds (I use these)

{What You Do}

* Puree yogurt, cinnamon & one peach

* Sprinkle small amount of crumbled cookies in bottom of popsicle molds.

* Add a spoonful of yogurt mixture to each mold & lightly push it down to mix with the cookie layer.  (This makes the cookies stick to the popsicle when frozen.)

* Gently fold remaining peach slices in to yogurt mixture & spoon into popsicle molds.

* Top molds with more crumbled cookie & lightly press down.

* Add popsicle sticks & freeze overnight.

Git in mah belly!!!

Each popsicle contains less than half a cookie, so as far as I'm concerned, this is breakfast! Cookies and cream was another favorite combination, but we weren't so sure about the cappuccino mint. #Icantimaginewhy

I'm experimenting with some 'grown-up' popsicles, so we'll see how those go! Hopefully I'll have a margarita recipe for you soon! Find more simple treats like this one here.

    1. I don't...I just run the mold under hot water for about 10 seconds and they slide right out!
