{Yum} Tortilla Roll-Ups

It's news to me, but apparently there's a big game next weekend. I'm usually more invested in the Super Bowl, but with none of our teams in it this year, I've kind of checked out. Which means I'll have none of the nail-biting angst, and all of the eating, drinking and fun! (Note to self: Wear leggings.)

Today I'm sharing a family-favorite recipe, perfect for game day...or any casual gathering. Since as far back as I can remember, these spicy little roll-ups have been at every family get-together, and have never varied or strayed from the original recipe. Apart from the number of jalapeños used...some family members are wussier spicier than others. #gimmeallthepeppers

They are always a crowd-pleaser, and simple to make. Basically, if you can go to the grocery store, you can whip these up! #rightupmyalley

{What You Need}

8 oz. Cream Cheese, softened
1 c. Sour Cream
4 oz. Chopped Black Olives
1/4 c. Green Olives, chopped
4 oz. Diced Green Chilies
2 c. Shredded Cheddar Cheese
1/4 c. Green Onions, chopped
1 tsp. Garlic Salt
Flour Tortillas (8 burrito or 12 taco)
Jalapeños to taste, chopped

{What You Do}

* Dump it all in a bowl. Done. Well, almost.

* Spread a thin layer of mixture on a flour tortilla. You can use any size tortillas, 
but I prefer the burrito-sized for less gluttony (you'll see what I mean in a second).

* Roll the tortillas, and place them tightly in a pyrex dish, seam side down 
(preferably one with a seal-tight lid). Layer damp paper towels between layers, and on top. 
Seal the dish with lid or foil.

* Refrigerate overnight, or several hours. This allows the tortillas to soften 
so they hold their shape and don't crack when cut.

* Cut the ends off each tortilla roll, and try not to pop each and every one
in your mouth in the process. #goodluckwiththat

* Cut the remaining tortilla into bite-sized sections. 
Try to save those for your guests. #yeahright

Serve to your guests, and bask in their adoration and shameless face-stuffing. Git in mah belly!

It really doesn't get much easier...the only trick is remembering to make them the day before. My kids inhale them fact, my daughter has packed this batch in her lunch everyday this week! I tend to add more jalapeños every time I make them, but I'm spicy like that. #seewhatIdidthere

  4. Thanks for the reminding me about this recipe! I haven't made these for months. Have you ever tried baking them? That's what I do with mine. You just chill them for a few hours before slicing. Brush a cookie sheet with olive oil and then slice and bake until lightly browned. So delicious!

  7. I've made these for years and they're always a hit!! I'm making some cheeseburger sliders with the Cosco pretzel buns. Kids and adults eat them right up!

  13. Don't you love anything in a roll up form? Sounds like your kids are good eaters. Would love to hear any other recipes you are making on game day. I'm a sucker for appetizers. I have my "go to" clam dip that I make at every family function. It's funny how you can be known for a certain item.

  15. Yummy! We made our first sushi over the weekend and I was the designated cutter, I had to keep eating the messy ends! Someone's got to do it!
