{Valentine} Let's Make Whoopie! (Pies)

Let's hear it for Friday! And Valentine's Weekend too! Thank goodness, because it's drug on long enough over here! We've decorated the house with hearts and set the table, now it's time to fill our bellies with the sweet stuff!

We made Whoopie Pies! I've been obsessed with these little treats after devouring my first one several months ago. They reign from the Northeast and are two little cakes sandwiched together with a dense, creamy filling. (Think Oreos made out of cupcake tops) {drool} So when I stumbled upon a Red Velvet Whoopie Pie Kit at Michaels, I knew it was on like donkey kong!

Grab your Valentine and let's make whoopie pies!

We used a kit, but you can make them with cake mix from this recipe, or from scratch Martha-style, with this recipe. (I made mine at home, therefore, they are homemade. So whatever.)

My kit came with a template to help pipe the thick batter in to a heart shape, but as you can see by the blobs, it didn't really help me much.

Don't forget to reward your helper:

Once the cakes were cool, I spread thick cream cheese frosting and sandwiched them together. We forgot they weren't shaped like hearts after the first delicious bite!

My family tires of a sweet after the first serving, so I decided to use the remaining Whoopie Pies as Teacher Gifts for Valentine's Day. I lined cupcake boxes with paper doilies (That's got to be one of the weirdest words! Seriously, try saying it outloud. "Doilies." Now the person next to you thinks you're weird.), and wrapped them with sparkly ribbon.

Red Velvet is perfect for Valentine's Day, but I'm already dreaming of other flavor combinations....vanilla with strawberry filling, pumpkin with cream cheese, chocolate with peanut butter!!! These are portable, hand-held cakes people, get excited!

I think they'd look fancier if I'd piped the frosting as well, but seeing as how this was the first time I'd ever even used a piping bag...I felt pretty fancy already.

The cookie sheet worked great for baking them, or Williams Sonoma sells a Whoopie Pie pan if you're so inclined. But you have to be the one to go in and ask for it. *snicker* Rebecca at I Wanna Be A Domestic Goddess is working her way through the Whoopie Pies Cookbook (Julie & Julia style). That sounds like my kind of experiment!

I'm starting to feel like Bob Eubanks from the Newlywed Game with all the Whoopie comments...I think it's the sugar. I need to get these yummies out of my house!

I'm also guesting at Mel V Designs today. It's a round-up of Valentine Projects, plus a sneak-peek at the Valentines we created for Babygirl's school party. Come say hi!

My son informed me last night that he needs 25 Valentines too...so guess what's on my To-Do List this weekend? What about you guys...special plans with a special person? Whatever it is, I hope it's grand...and full of whoopie* sweets!

*I had to slip one more in. This makes 10 times I've used the word 'whoopie.' I should get a prize.

  13. I have a confession to make.......I attempted the heart shapes for mine last night and failed miserably! But, I found a great trick....since I didn't have the right size cookie cutter to cut them down I used a glass, it worked great! Just an FYI....Yours turned out fabulous!

  17. Those look and sound super tasty. I can't believe your family gets sick of sweets after the first serving. I wish I had that problem -- I have to be proactive and take my treats to the office so Justin and I don't consume all of them! :)
